Sweet Labneh with mango, pomegranate, pistachio and warm honey

If your looking for a simple, fruity, summery, light pudding this is so delicious. The yogurt needs to be drained for 4-6 hours minimum but best left overnight to get it really thick, rich and creamy.


800g greek yogurt
80g icing sugar
a few pinches of cinnamon

1 sliced mango
1 pomegranate, seeds removed
20g coarsely chopped pistachios
5 tbsp runny honey

Mix the yogurt, icing sugar and cinnamon together in a bowl.
Get a clean bowl and place a sieve resting in the top of it. Lay a clean tea towel on the sieve and spoon the yogurt into it, fold over the excess tea towel to cover the yogurt and place in the fridge overnight, or for at least 4-6 hours. This will take most of the moisture out of the yogurt and turn it into labneh.

The yogurt should be nice and thick by now and all you need to do is spoon it into a bowl and scatter it over your fruits and nuts. The honey you can either drizzle over cold or heat in a pan so it goes really runny.

The labneh is also really good for brunch with some crunchy granola, berries and honey if you feel like treating yourself at the weekend.

Apricot and almond cake

I have had a slight obsession with cooking almond cakes at the moment, and in France there were loads of delicious apricots so I ended up making lots of different styles of cakes. They are really gooey and zesty and very tasty and everyone loved them. This one was my favourite because I put apricots in the middle and on the top. 200g unsalted butter 200g caster sugar 200g ground almonds 40g plain flour 4 eggs zest of 1 orange zest of 1 lemon 1 tbsp apricot liqueur or cointreau  8 apricots sliced almonds for sprinkling Preheat the oven to 170˚C. Smoked trout pate

I have been in the Loire Valley for the last three weeks working for a lovely family with four kids, there has been lots of spaghetti on the walls, wine drinking, chocolatey faces and bum pinching from a certain naughty four year old. We are staying in a big Chateaux and my bedroom in in a turret so I am now calling myself Rapunzel, although no french men have been at my window trying to climb up my hair yet! Here is a nice little recipe from Jamie Oliver for smoked trout pate which I have been doing as a little addition to summer lunches.
